We finished our school work last week and that makes today the first official day of summer. And nothing says summer quite like Cool Whip. Am I right?

So, this afternoon, I made a big batch of my faux ice cream sandwiches for the freezer. I did these last summer as well but, this year, I jazzed them up a bit.

Now, in the past, this is the point where I would put the top cracker on and put it in the freezer. Today, however, I thought, “What goes better with ice cream than bananas and chocolate?” So, say hello to my little friend: the faux banana split ice cream sandwich.
